Roasting Guide
| French Roast |
Our darkest roast. Nearly black appearance. Very Oily surface. Unique fragrance, quite different from other degrees of roast. Our French Roast is also unique from that of other roasters in that there is no carbony aftertaste. None! The Coffees: Ebony Pearls and Organic Ebony Pearls™. |
| Dark Roast | This might also be termed an “Espresso Roast”. Darker than Full City Roast. The Coffees: Espresso Chocolon™, Wicked Wolf®, Valentine’s Elixir™, Deadman’s Reach® and Organic Deadman’s Reach. |
| Full City Roast | The early stage of a Dark Roast. Most coffees achieve their fullest flavor development here or in the Dark Roast stage. The Coffees: Bruin Blend®, Organic Bruin Blend, Skookum Blend®, DeCaf Skookum Blend, Santa Caws™, Dark Colombian, DeCaf Colombian, DeCaf Organic Peruvian, and Organic Sumatran. |
| Medium Roast | Coffee flavors are more fully developed than most Light Roasts. This is the optimum roast for Cherry Karma™, Resurrection Blend®, Misty Fjords™, Ethiopian Yirgacheffe, Organic Peruvian Gold, Organic Mahogany Sweets and Organic Nayarit DeCaf. |
| Light Roast | Most coffees do not develop well at this stage, tending to be too acid, even astringent, also thin, grassy tasting. A few coffees, however, can be quite sweet. Breakfast Blend is the only light roasted coffee. |
*Note: Some varieties are only available seasonally or as a special blend.
